Creamy Chicken Skillet

This Creamy Chicken Skillet is easy to make, low carb, Keto friendly and DELICIOUS!!!!

Before we get started with the recipe, here are the two wines we highly recommend to pair with this dish. A Chardonnay and a Merlot, whichever you are in the mood for 😉 Tasting notes are at the bottom of the recipes.

Now to the recipe, here is what you will need:

  • Chicken – we used boneless skinless chicken breasts. We half each breast into cutlets to make them flat.
  • Veggies – Mushrooms and bell peppers (any color you like)
  • Garlic
  • Herbs – Dried thyme and rosemary, fresh parsley.
  • Spices – Onion powder, garlic powder, salt and pepper
  • Cream
  • Parmesan cheese
  • Oil and butter

 

And here is how much you’ll need:

Meat:
3 Chicken breasts (cut in half or use cutlets)
Produce:
3 Colored bell peppers
4 Garlic cloves
1 tsp Garlic powder
8 oz Mushrooms
1 tsp Onion powder
1/4 cup Parsley, fresh
1 1/4 tsp Rosemary, dried
1 1/4 tsp Thyme, dried
Baking & Spices:
1 Pepper
1/2 tsp Pepper
1 Salt
1/2 tsp Salt
Oils & Vinegars:
1 tsp Oil
Dairy:
1 3/4 tbsp Butter
1 1/2 cup Cream
1/2 cup Parmesan

 

Here is how the fun went:

I made the chicken first. I cut the chicken breasts in half so they were thinner and would cook quicker. I rubbed oil and Parmesan cheese on the chicken, put a little butter and oil in the pan, seared each side for 7-8 minutes.

Once chicken was cooked, I put them on a plate and added a little more oil and butter to the pan with some chopped garlic.

Then I added the yummy veggies (peppers & mushrooms) and sautéed for one minute.

Next I sprinkled in the green onion, parsley, poured 1 1/2 cups heavy cream, 1/2 cup Parmesan, salt, pepper, (you can add Italian seasonings or onion powder, garlic powder, rosemary and thyme if you want). Stir everything together.

Lastly, it’s time to put the chicken breasts back into the pan and cook on low-medium heat for about 5 minutes, stirring occasionally. Add extra parsley to garnish. And ta-dahh! A dinner bursting at the seams with flavor. Now for the wine!
