This aged sake uses a flower yeast for fermentation and has a nose filled with banana, smoke, potato, sesame, vanilla, and anise elements. This is a perfect “daytime” Koshu sake as it is not heavy and musky, rather it is silky soft and very aromatic. The aging muffles the acidity and brings forth a smoother and layered drinking experience. Look for hints of ripe apricot, and plum flavors highlighted by a touch of raisins.p.
