Spottswoode 2019 Estate Cabernet Sauvignon
Critical Acclaim
Not shy, this throws a pretty lush and gorgeous wave of warmed cassis and mulberry puree at you, carried by very polished tannins as violet, red licorice and sweet tobacco hints fill in behind. Shows good energy through the finish, too, with a subtle mineral hint to keep everything honest.
Tasting Notes
The 2019 vintage is composed of 89.5% Cabernet Sauvignon, 6.5% Cabernet Franc, and 4% Petit Verdot, grown organically in the family’s St. Helena vineyard. In the glass, it shows a deep garnet-purple hue and opens with vibrant aromas of black cherries, blueberries, cassis, and chocolate-covered fruit, accented by hints of cedar, cinnamon stick, roses, and orange peel. On the palate, the wine is medium-bodied yet tightly wound, shimmering with energy and precision. Layers of floral, savory, and mineral notes unfold alongside focused black fruit, while refined tannins and vibrant acidity provide structure and balance. Secondary flavors of pomegranate, pine, sandalwood, and earth add complexity, leading to a long, minerally finish that speaks to its age-worthy character.
Food pairings for the 2019 Estate Cabernet Sauvignon should highlight its richness and layered profile. Classic pairings such as grilled ribeye, braised short ribs, or herb-crusted lamb will harmonize with its dark fruit and savory spice notes. Earth-driven dishes like mushroom ragout, roasted root vegetables, or truffle risotto will emphasize its mineral and floral nuances, while aged cheeses such as Comté or Parmigiano-Reggiano provide a refined counterpoint to its tannic backbone. Its elegance also makes it suitable for pairing with more delicate preparations like cedar-planked salmon or duck breast with a cherry reduction, allowing the wine’s complexity to shine without being overshadowed.
