Font Mars Picpoul de Pinet (Languedoc) - This wine is the perfect expression of its coastal appellation near the Thau Lagoon, famous for its oyster beds, offering bright and tangy flavors of lemon, lime, and fresh green apple, often layered with subtle notes of white peach, honeysuckle, and a distinct, bracing sea-salt minerality. Made in stainless steel to preserve its vivid freshness, the Font Mars is light-to-medium-bodied and bone dry, making it the ultimate pairing for any fresh seafood, especially raw oysters.

Triennes St Fleur Viognier (Provence) - The Triennes Sainte Fleur Viognier is a beautiful, aromatic white from the Var region of Provence, crafted by Burgundy legends Jacques Seysses and Aubert de Villaine, who apply their fine wine philosophy to this southern varietal. This Viognier has intense perfume, delivering rich, expressive notes of apricot, white peach, honeysuckle, and a delicate hint of lavender honey, while being kept remarkably fresh by the region's high-altitude vineyards and cool evening harvesting.  Triennes is vinified entirely in stainless steel, achieving a perfect balance between its aromatic richness and a clean, crisp, mineral structure on the palate.

Domaine Galevan "Liebre Expression" Blanc (Rhone River Valley) - 

Produced by Coralie Goumarre, this Côtes du Rhône Blanc is a blend that features a high proportion of Clairette, often complemented by Roussanne and Marsanne. It is distinguished by its blend of freshness and richness, exhibiting a shimmering, pale gold color and a dazzling nose of white fruits, local scrubland herbs (garrigue), and mineral notes.On the palate, it is dry, generous, and powerful, with a lovely textural roundness that often hints at notes of honey, pear, and subtle nuttiness, while maintaining a lively, mineral-driven acidity thanks to its chalky terroir.

Chateau du Trignon Marsanne (Rhone River Valley) - The Château du Trignon Marsanne is a rich from the Southern Rhône that offers a textural and aromatic experience of one of the Rhone's signature varietals. On the nose, you'll find classic Marsanne notes of white peach, fresh apricot, and acacia flower, underscored by a lovely suggestion of beeswax and toasted almond. The palate is medium to full-bodied with a subtle richness and smooth mouthfeel, owing to a small portion of oak aging, yet it remains clean and lively. Its balanced structure, featuring stone fruit flavors and a hint of refreshing citrus or bitter orange on the finish.

Maz Caz Costieres de Nimes Blanc (Southern Rhone) - The Maz Caz Costières de Nîmes Blanc is a vibrant and unique Southern Rhône blend of Roussanne and Grenache Blanc, crafted by American winemaker Michele d'Aprix. Sourced from vineyards near the Mediterranean, the wine is fermented entirely in stainless steel, which gives it a clean, unoaked style focused on freshness rather than richness. The resulting profile is bright and zesty, showing elevated notes of citrus, white stone fruit, a savory hint of white pepper, and a distinctive, refreshing touch of brine due to the nearby sea influence.

Vieux Lazaret Chateauneuf du Pape Blanc (Southern Rhone) - As outstanding and sought after as white Chateauneuf can be, it sadly accounts for less than 10% of the region's production, making them hard to find and expensive. On the nose, it offers an attractive mix of ripe yellow fruits like peach and nectarine, layered with complex nuances of white flowers, a touch of beeswax, and often a subtle, smoky hint of anise or toasted almond from the partial barrel aging. The palate is long and textural, with a full, fleshy mouthfeel that is cut by a spine of fresh acidity, ensuring it remains clean and lively on the finish.  While delicious now this is also a wine with great aging potential, gaining notes of honey and deepened minerality over five to ten years.
