Shibata Black "Yuzu"

Shibata Black Yuzu is a refreshing and vibrant yuzushu made with a junmai sake base using Ginpu rice from Hokkaido, known for its clarity and subtle aroma. The organic yuzu fruit, grown on Shibata’s own farm in Okazaki City, Aichi Prefecture, is squeezed with the skin left on, allowing the aromatic oils and a touch of bitterness from the pith to infuse the sake. This technique results in a drink that balances gentle sweetness with bright, lip-smacking acidity and a clean, citrus-forward profile. The Kanzui well water used in brewing, sourced from the mountain behind the brewery, contributes to the sake’s soft texture and elegant finish. With only about 20ml of juice extracted from each yuzu fruit, the flavor is concentrated and pure, making this “Pocket Sake” a standout for warm-weather sipping.
