Perliss Estate 2018 "The Ravens" Cabernet Sauvignon
Net Priced Wine
Winemaker Notes
100% Cabernet Sauvignon from our single, estate vineyard. Yields are kept down and organically farmed to achieve the best expression of the fruit. The grapes are hand-harvested and naturally fermented with the vineyard’s indigenous yeast. The 2018 vintage has beautiful structure, fine but present tannin, and is highly age-worthy. The 2018 RAVENS is a blend of the same juice aged in two different vessels for almost two years: 80% French oak barrels made by small-production coopers, and 20% Tuscan terra-cotta amphora. It is bottled unfiltered and unrefined.
While approachable now, the tannins innate to their wine would benefit from aging and promise a long drinking window. The bottles are hand-dipped in a soft wax, whose color recalls the bark of the beloved Manzanita trees that characterize our Calistoga landscape.
Critical Acclaim
96pts Vinous
The 2018 Cabernet Sauvignon The Ravens Vineyard is incredibly beautiful and vivid. Inky and heady, with striking purity of fruit, the 2018 hits all the right notes. Raspberry jam, blood orange, mint and rose petal give the 2018 a very distinct exotic feel. The aromatics alone are so enticing, but there is a lot more to the 2018. I would give the 2018 at least a few years in bottle to soften.
96pts Robert Parker
Made from 100% Cabernet Sauvignon, the 2018 Cabernet Sauvignon The Ravens has a deep garnet-purple color, prancing out of the glass with vivacious scents of blueberry pie, black currant cordial and fresh blackberries plus hints of cinnamon toast and clove oil. Full-bodied, the palate has an approachable structure of finely grained tannins and bold freshness supporting the tightly knit black fruits, finishing with a spicy kick. 346 cases were made.
