Domaine Paul Thomas sits perched in the iconic village of Chavignol, widely regarded as the spiritual heart of the Sancerre appellation. This small, family-owned estate manages nine hectares of steeply terraced, estate-grown vineyards rooted in the famed terres blanches—the ancient Kimmeridgian limestone soils littered with fossilized sea life that define the world's most pristine Sauvignon Blanc. Today, Raphael Thomas carries forward his family's artisanal winemaking tradition, farming sustainably to maintain absolute soil health and hand-harvesting from dramatic, steep slopes such as Les Monts Damnés. The cellar practice relies on traditional gravity-fed processing, native yeast fermentations, and minimal intervention, ensuring that the finished wine reflects nothing less than pure, unadulterated terroir.

2024 tested every grower in the Loire, with frost, hail and record rain cutting yields across the region. But the cool season paid off in the glass: lower alcohol, bright acidity and real aromatic lift. Expect a burst of lime, green apple and fresh-cut grass, with a hint of gooseberry, before a lively, focused palate that finishes dry and mineral, with a flinty edge and a touch of white pepper. Native yeasts, stainless steel fermentation and no malolactic or oak keep it pure and crisp. Pour it with the local goat cheese, oysters, shellfish or crudo. This is Sancerre the way the locals drink it, and Raphaël's wines usually sell out at home in France before they ever reach export markets.
