Vattan 2025 "O-P" Sancerre (Loire Valley, France) 
Sourced from steep, chalky Kimmeridgian limestone slopes in Sancerre, this crisp white opens with brilliant aromas of white peach, pink grapefruit, crushed flint, and fresh lemongrass. Fermentation and brief aging on the lees in temperature-controlled stainless steel tanks preserve maximum freshness and regional typicity. The palate is electric and focused, carrying vibrant citrus, green apple, and wet-stone minerality toward a long, bone-dry finish. 

By.Ott 2025 (Côtes de Provence, France) 
A quintessential Provençal blend of Grenache, Cinsault, Syrah, and Mourvèdre sourced from coastal vineyards overlooking the Mediterranean. Pale pink in color, it offers lifted aromatics of white peach, wild strawberry, citrus blossom, and a touch of sea spray. Direct pressing and stainless steel aging yield a bright, light-bodied palate bursting with juicy red berry fruit, white nectarine, and a crisp, mineral-driven finish.

Jaboulet - Domaine de Thalabert 2022 "Mule Blanche" Crozes-Hermitage (Rhone Valley, France) 
An equal blend of Marsanne and Roussanne from 50-year-old vines in the stony soils of Crozes-Hermitage, certified organic. The glass fills with rich aromas of yellow pear, white peach, honeysuckle, acacia flower, and toasted almond. Fermentation and aging in a combination of concrete eggs and oak casks create a round, luscious texture on the palate, perfectly balanced by fresh orchard fruit, subtle beeswax, and a persistent, savory finish.

Thymiopoulos Vineyards 2024 "ATMA" Assyrtiko (Macedonia, Greece)
 Grown at high elevation in the cool mountainous terrain of Naoussa, this mountain-grown expression of Greece's signature white grape showcases vibrant energy. Bright aromas of lime zest, green apple, lemon blossom, and crushed granite lead into a tense, bone-dry palate. Stainless steel aging ensures raw purity, letting the grape's natural high acidity, salty minerality, and crisp citrus core shine through with clarity.

Bottles are 750ml each unless specified otherwise.
