Picpoul de Pinet is the bright, seaside white of southern France, grown along the sunlit shores of the Thau Lagoon in the Languedoc. The grape, Piquepoul Blanc, earns its nickname “lip‑stinger” from the lively, natural acidity that makes the wine so refreshing. Vineyards sit on gentle limestone terraces cooled by Mediterranean breezes, giving Picpoul its crisp, citrus‑driven personality. The wines are fermented in stainless steel to keep them clean, vibrant, and aromatic—exactly the kind of easy, seafood‑loving white you’d expect from the French Mediterranean.

La Chapelle du Bastion takes its name from a historic stone chapel that watches over the vineyards near Pinet, a nod to the region’s long maritime history. The estate focuses on preserving freshness: cool stainless‑steel fermentations and no malolactic conversion keep the wine bright and energetic. A little extra time resting on fine lees adds just enough roundness to soften the edges, giving the wine a smooth, lightly textured feel without losing its coastal snap.

The 2025 La Chapelle du Bastion pours a pale straw color with a hint of green. The nose is fresh and inviting—white peach, crisp green apple, and delicate white flowers, all lifted by a subtle salty breeze. On the palate, it’s clean and focused, offering flavors of pink grapefruit, lime zest, and wet stone. The finish is long, refreshing, and distinctly mineral, the kind of mouthwatering acidity that makes you immediately think of oysters, shrimp, or anything pulled from the sea.
