Tasting Notes

This vintage is sourced from a blend of sustainably farmed vineyards including Mahonia, Illahe, Koosah, Sojeau, Prophet, Jubilee, and Cortell Rose, spanning elevations from 200 to 750 feet and planted in a mix of volcanic and sedimentary soils. The wine pours a translucent ruby hue and opens with aromas of cherry, red apple, fresh flowers, and loam. On the palate, it delivers layers of bright red fruit—think raspberry and cranberry—alongside subtle spice and a creamy silkiness balanced by juicy acidity. Fermented with proprietary “Jayer” yeast and aged for 10 months in nearly all neutral French oak, it maintains purity and finesse. This Pinot Noir pairs beautifully with herb-roasted chicken, wild mushroom risotto, grilled salmon, or Brie and Camembert cheeses, offering versatility across both rustic and refined dishes.
