Domaine des Cassagnoles Côtes de Gascogne Blanc is a remarkably crisp and refreshing white wine produced by winemaker Gilles Baumann and his daughter, Laure, in the Southwest region of France. Crafted predominantly from a traditional Gascon blend of Colombard, Ugni Blanc, and Gros Manseng, often elevated with a touch of Sauvignon Blanc, this estate-grown wine highlights the regional terroir of clay and limestone soils. On the nose, it greets the senses with vibrant aromas of lemon zest, green apple, tangerine, white flowers, and hints of grassy herbs. The palate is lively and zesty, bursting with a juicy symphony of grapefruit, lime, unripe white peach, and subtle tropical notes like pineapple and melon. This bright acidity is perfectly balanced by a clean, stony mineral edge and a slight touch of salinity, giving the light-to-medium-bodied wine an over-delivering depth and a smooth finish. Due to its thirst-quenching vivacity, it pairs beautifully with fresh seafood dishes such as pan-seared halibut with citrus compote, sardines with garlic, or raw shellfish platters. It also complements light summer fare like fresh salads, goat cheese, or savory tarts, and adds a nice contrast to flavorful street food such as fried squash blossom tacos.
