Tasting Notes
Sourced from a single biodynamically farmed vineyard in the Vallée de la Marne, this Champagne is made entirely from Pinot Meunier and aged in oak barrels crafted from trees in the nearby forest of Fossoy. The wine pours a pale straw color with a persistent mousse and opens with aromas of lemon, black pepper, snow peas, peaches, and celery root. On the palate, it is tense and vibrant, with high acidity and a long, zippy finish. The lees aging adds subtle texture and complexity, while the oak imparts a gentle smokiness and structure. Its saline minerality and earthy undertones make it a compelling match for oysters, scallops, sushi, and delicate vegetable dishes, as well as richer fare like roast chicken or mushroom risotto, where its acidity cuts through and elevates the flavors.
