Familia Torres 2021 "Salmos" Priorat
Tasting Notes
The Familia Torres 2021 "Salmos" Priorat is a highly acclaimed, full-bodied Spanish red wine crafted from a traditional blend of Cariñena (Carignan), Garnacha (Grenache), and a touch of Syrah. Sourced primarily from the slate-rich (llicorella) terraces of the La Giberga vineyard in Porrera, this vintage aged for 14 to 15 months in French oak barrels and foudres. It presents a beautiful, deep dark cherry color and opens with a complex, punchy bouquet. The nose reveals a concentrated mix of sweet strawberries, raspberries, cassis, and black cherry jam, layered with Mediterranean herbs like rosemary, thyme, and lavender, alongside warm undertones of dried dates, prunes, cocoa, and white pepper. On the palate, the wine delivers a textured, velvety, and medium-to-full body supported by a firm, mineral structure and fine-grained tannins. The finish is remarkably long, elegant, and pristine, distinguished by sophisticated accents of dark chocolate, licorice, and roasted coffee.
This powerful yet ethereal Priorat pairs exceptionally well with robust, savory dishes that can match its intense weight and complex herbal profile. It serves as an excellent companion to wild game and rich meats, such as roast lamb, venison, wild boar, or hare. The wine's earthy mineral spine and Mediterranean woodland notes also seamlessly complement hearty grilled vegetables and mature sheep cheeses, such as Manchego. For the best tasting experience, decanting the wine shortly before serving is highly recommended to allow its intricate aromatic layers to fully unfold.
