Suigei Brewery "Drunken Whale" Tokubetsu Junmai Sake 720ml

Located in Kochi City on the southern coast of Shikoku, Suigei Brewing Company was established in its modern form in 1969, though its brewing origins trace back to 1872. The brewery name translates directly to drunken whale, an homage to Yamauchi Yodo, the nineteenth-century lord of the Tosa Domain who was legendary for his love of poetry, food, and sake. Nestled between mountains and the Pacific Ocean, Suigei draws pure, soft water from the headwaters of the pristine Kagami River. The house brewing philosophy focuses heavily on crafting dry, clean, structure-driven sake with balanced acidity and restrained fruit aromatics, maintaining the traditional, robust flavor profile that defines the Tosa region.

Suigei Drunken Whale Tokubetsu Junmai is brewed with domestic rice polished down to fifty-five percent—a milling ratio equivalent to ginjo status—and fermented using traditional Kumamoto yeast. The nose opens with a subtle and reserved bouquet featuring gentle notes of rose petal, damp wood, wild grape, and steamed rice. On the palate, it exhibits a remarkably crisp, light-bodied texture supported by a lively core of acidity. Muted fruit tones of tart green apple and unripe strawberry give way to subtle accents of fennel and hops. True to the brewery's signature style, it finishes completely dry, brisk, and exceptionally clean, leaving a sharp, refreshing minerality behind.
