Tasting Notes

Crafted exclusively from Cabernet Sauvignon grapes grown in the Sleeping Lady Vineyard in Yountville, the 2018 Ad Vivum opens with a deep garnet-purple hue and an aromatic bouquet of blackcurrant jelly, warm plums, mulberries, and black raspberries, accented by floral notes of roses and violets, hints of anise, tar, and earthy undertones. On the palate, it is full-bodied and tightly knit, with firm, ripe, grainy tannins and vibrant acidity that support its complex layers. Flavors of sun-kissed blackberry and cherry mingle with cocoa and a touch of mint, creating a profile that is both intense and refined. The finish is long and minerally, with a pleasantly austere tension that suggests excellent aging potential. This wine pairs beautifully with robust dishes such as grilled ribeye steak, braised short ribs, or mushroom risotto, and it complements aged cheeses like Manchego or Comté, enhancing the wine’s depth and savory character.
