Crafted using méthode champenoise, this Blanc de Noirs is made from Pinot Noir grapes grown in the estate’s “Bubbles Block,” a high-elevation parcel planted with Dijon clone 115 and Swiss clone Wadenswil. The wine opens with aromas of red raspberry, dried rose petals, and warm brioche, leading into a palate that is bright, mineral-driven, and layered with citrus zest and subtle spice. Its extra brut style—featuring minimal residual sugar—enhances its dry, clean finish, making it an ideal match for briny shellfish, goat cheese crostini, or delicate tempura dishes. The wine’s four years en tirage contribute to its fine mousse and depth, while fermentation in stainless steel and neutral French oak preserves freshness and limits malolactic influence.
