• Bledsoe Family Cabernet Sauvignon 2023 (United States, Washington State, Columbia Valley): This wine represents the New World, high-quality, full-bodied style of Washington Cabernet. Sourced from the esteemed Columbia Valley, it is known for its purity of dark fruit—specifically black cherry, cassis, and espresso bean—backed by fine, polished tannins and a generous, structured finish. It embodies the ripeness and density typical of the region's warm days and cool nights.

• In Situ Reserva Cabernet Sauvignon 2023 (Chile, Aconcagua Valley): Hailing from high-altitude vineyards at the base of the Andes, this Chilean Cabernet offers exceptional structure and balance. It is a full-bodied wine defined by concentrated flavors of black currant, dark plum, and tobacco leaf, supported by firm, refined tannins and notable freshness due to the extreme diurnal temperature shifts of the valley. It is typically aged in a blend of French and American oak.

• Howard Park Cabernet Sauvignon 2021 (Australia, Western Australia, Margaret River): This wine is a benchmark for the elegant, savory style of Australian Cabernet that rivals the classics of Bordeaux. The Margaret River region is known for producing Cabernets with exceptional finesse. The 2021 vintage delivers a refined profile featuring core notes of cassis, violet, lead pencil, and fine cedar spice, boasting a medium-to-full body with very firm, powdery tannins and a long, complex finish that speaks to its aging potential.

• Paysan "Old Vines" Cabernet Sauvignon 2022 (United States, California, San Benito County): Produced by the acclaimed Ian Brand, this Cabernet is sourced from historic, low-yielding old vines—some planted in the 1960s—in the rugged Central Coast. It is intentionally made in a classic California style reminiscent of the 1970s, focusing on great concentration married to high acidity. The wine presents cohesive flavors of elderberry, black cherry, cocoa dust, and cracked peppercorn, supported by a chalky, cohesive tannic structure and an impressive sweet/savory balance.
