Tasting Notes
This wine pours a light plum-red hue and opens with aromas of violets, green peppercorn, and brambly red berries, followed by notes of ground white pepper and graphite. On the palate, it delivers red apples, cherries, and dried herbs, with Grenache providing softness and lift, Shiraz contributing mid-palate structure, and Mourvèdre adding earthiness and savory depth. The wine’s 14.6% ABV and bright acidity are well-integrated, creating a balanced and expressive profile. Aged for 10 months in seasoned French oak barriques, it maintains freshness while developing subtle complexity. Ideal food pairings include grilled lamb chops, ratatouille, rosemary chicken, or lentil stew, as well as hard cheeses like Manchego or aged Gouda.
