Tasting Notes

The 2017 Don Melchor opens with expressive aromas of cassis, blackberry, plum, cedar, graphite, tobacco leaf, and subtle floral notes. On the palate it is full‑bodied yet refined, showing layers of dark fruit, cocoa, savory spice, and fine‑grained tannins supported by vibrant acidity. The blend is dominated by Cabernet Sauvignon with small portions of Cabernet Franc, Merlot, and Petit Verdot, each contributing aromatic lift, mid‑palate richness, and structural finesse. Its depth and polished texture make it an excellent partner for dishes such as grilled ribeye, lamb chops, braised short ribs, roasted duck, mushroom ragù, and aged cheeses, where the wine’s structure and freshness complement both richness and umami‑driven flavors.
