Tasting Notes

The 2014 Mundus Bacillus Terrae opens with lifted aromas of black cherry, plum skin, violets, graphite, and subtle spice, supported by an undercurrent of wet stone and herbal freshness. On the palate it is concentrated yet remarkably elegant, showing layers of dark berry fruit, cassis, cocoa, and savory earth framed by firm, chalky tannins and vibrant natural acidity. The wine is 100% Malbec sourced from the coolest, most limestone-driven parcel of the Adrianna Vineyard in Gualtallary, resulting in a profile that balances richness with precision. Its structure and minerality make it an exceptional partner for dishes such as grilled lamb, ribeye, duck breast, mushroom risotto, truffle-infused dishes, and aged cheeses, where the wine’s depth and acidity complement both richness and umami.
